Making food prettier

Since finally giving in and watching MasterChef, I’ve been busy trying to up my game. Poaching pears, for example. And trying to make everything I put on a plate look a little prettier.

Results have been mixed.

This is pigeon breast, served with a sweet potato mash, with croutons, milk gel and chanterelles served two ways: fried and powered. The same ones we picked up in mushroom town, for reference.

Here I have served duck with the skin cooked separately, on mash with an orange gel, fondant potatoes, cranberry foam and a dressing of parsley. There are definitely issues with this dish:

  • My fondant potatoes are rather jagged. Do people use a cookie cutter to get perfectly round potatoes?
  • The duck skin curled up while cooking. I scored it previous to this to try and prevent that, but without success.
  • The cranberry foam was still quite liquidy, which rolled around the plate.

Confit duck on a bed of apple purée served with Asian roast potatoes, coriander and chilli jam.

Lamb leg with parsley, fried potato slices and peas. I like this one because it is simple: plain ingredients, not overcrowded or covered in fancy nonsense, but it still tastes good.

There are some weird combinations going on here. It’s fish and chips, with an added scallop, and some strawberries mixed in with the parsley. I served the chips in a separate bowl to avoid having to cram everything on to the plate.

Conclusion

A lot of the stuff just needs practice: mastering the different techniques, for example, is something I need to work on. But the big takeaway for me is to put less stuff on the plate. It is impossible to be elegant when you are trying to ram too much food on there.

When I went for my run last week I passed two families of baby ducklings. So I decided to go back the next day with my camera.

Duck of the Day is clearly a terrible name for this series. Firstly, most of the animals featured in it are in fact not ducks, but other types of birds. Secondly, the same duck appears twice. But it does have alliteration, which makes the whole thing more memorable (even if you only remember it for how semantically incorrect it is).

AHS hits Warwick

Last weekend was the AHS national conference 2009 hosted by Warwick Atheists. It is an interesting setup they have down there, it is a campus university based in the middle of nowhere as most of them are – but most of the students don’t live on campus. That seemed the point of a remote campus university to me but there you go. It’s also not in Warwick, nor in Leamington Spa were we were all staying lol.

We did however get the pleasure of spending some time in Leamington Spa as well as visiting my first 24/7 McDonald’s (though I’m sure most of you can’t really appreciate how exciting that is for me :p ), it’s good to know what where ever you are you can always really on Wetherspoon’s for a cheap pint.

Warwick’s campus was quite nice, they have a great bar there called the Dirty Duck which serves what I can only describe as duck steak – it’s like a full size big steak rather than the breast fillet you get from chickens and was absolutely delicious. They also do a fine carvery which we sampled on the Sunday.

In terms of AHS stuff we now have an exciting new committee with Jenna as president, Adrian as secretary and Stuart as treasurer. A number of other appointments were also made, congratulations to all who got positions! I am stepping down as webmaster as I believe I can better serve the AHS as a trustee so Michael will be taking on the web duties.

All in all the coming year is looking pretty bright for the AHS.
